Banana banana bread
Twice the usual banana makes this rich and moist.
Ingredients:
2 cups Flour
1 tsp Baking soda
1/4 tsp Salt
1/2 cup Butter
3/4 cup Brown Sugar
2 Eggs, beaten
2 1/3 cups Bananas, overripe, mashed

    Instructions:
  1. Preheat oven to 350F. Lightly grease a 9x5 loaf pan. (Butter is good.)
  2. In a large bowl, combine flour, baking soda, and salt.
  3. In mixer bowl, cream together the butter and brown sugar, then stir in eggs and bananas until well blended.
  4. Stir banana mixture into flour mixture, just to moisten.
  5. Pour batter into prepared load pan.
  6. Bake for 60-65 minutes.

Shelley found this recipe at allrecipes.com; I typed it in here to make it easier to find (or send to others). We save our overripe bananas in a bag in the freezer until we have enough to make a loaf of this bread. It's not very sweet, so if you'd like it sweeter, increase the sugar.
